Those spams are normally in HTML and contain an image or someother element that will be downloaded by (most) email clients. So they have verified that the email address is valid for spam lists.
Use a client such as http://www.mozilla.org/products/thunderbird/ and easily turn off HTML emails, or the downloading of embeded images.
