Day 18 — Whatever tickles your fancy

We wanted to do something different for Easter this year – in other words, less candy, so we headed down to Cannery Row to pick up some stuff from the tourist traps. We loaded up on polished rocks, jewelry, miniature coins, and tiny toys to fill up the plastic Easter eggs. She is going to LOVE opening up the “treasures.” I can’t wait to see her face! We figured we should have at least some sweets for the Easter basket, so we stopped in at Rocky Mountain Chocolate Factory to pick up a chocolate bunny, cream filled chocolate eggs, jelly beans, etc. We couldn’t resist getting a few of these truffles while we were there. Yum!

Miniature Fruit Tarts

These are so easy to make. I baked some frozen puff pastry cups which taste good, but I’d use miniature tart shells if I wanted them to look better. And if I could find them around here! I was in a hurry, so I used instant vanilla pudding instead of home made custard. I topped them with strawberries, kiwi fruit, canned peaches, and blackberries and finished with a bit of apricot preserves. Simple and delicious!

What to do with the leftover fruit? Make fruit salad!

Chocolate Peppermint Bark Cookies

These cookies are so delicious. I usually hate chocolate cookies because they’re so dry and bland, but these are anything but. I followed this recipe, but substituted a cup of white chocolate chips and a few crushed up candy canes for the peppermint bark.
